Unwrapping a mesh

Hi I'm new to the site and I am interested in expanding my Unwrapping skills. Ive seen tutorials were they do it by element . Ive tried this and every time I finished one and do another one it change to uv's on the first. (hope that made sense) But can anyone teach me how to do this correctly ? Oh I use 3D Max7

Autodesk - Autodesk 3ds Max - 3ds Max 8 Features

The second option from the top is pelt mapping. I watched it and my time to unwrap a model went from a full day to less than an hour, and I feel as if I get better results.

Try it, you'll convert too.
