I'm just a 'freelance' 3DS Max user. However, I advise you to be 'ready' to use other 3D modelling programs as you will be using the program that the company that you are working is using. Most game developers use Granny3D nowadays (as you can see the .GR2 files in the games' directory). As I know, that program can import/export 3DS Max and Maya format.

As for level design, I believe that it will not related to 3D modelling very 'closely' since they might have developed their own 'level designer' for their games (so the players can design their own maps too, as you can see in many RTS games). But my guess is, if there isn't any 'level designer', most probably you must model according to the 'scale' that they have set for you (just like prince of persia series, there is a certain 'distance' where the prince and jump so if you notice carefully, the distance is the same for every place where he needs to jump)
