Hi, I think that this point is only to explain you how the color of the materials affect the whole scene ( because if a photon bounces in a white surface, it will give more brigtness to the objects around, and if the object is black, it will absorbe all the light of the photon, and the scene will look dark ), so, if you put whitest materials in your scene, they will bounce the ligth across the scene. This is why the tutorial says you to put a material "cuasi-white", to let you see how the brightnes or the darkness of the materials affect the scene.
